Gluten-Free Recipe (this one's for you Jaimie)

I’ve had some requests lately for gluten-free recipes. So, for all you viewers who can’t consume gluten or for those of you trying to stay away from foods that contain gluten, please enjoy my Gluten-Free Tomato Salad – the perfect Spring recipe.

Gluten Free Tomato Salad


Ingridients:

Dressing
•Fresh basil leaves
•Minced Garlic
•Olive Oil
•½ Lime

Salad
•Fresh Tomatoes
•1 Medium Cucumber
•1 Apple (red or green – whatever you prefer)
•Mango
•Red or Green Onion – whichever you prefer.
•Fat Free or Reduced Fat Feta Cheese (shredded reduced fat cheese will work too)
•½ can or 1 can of Chick peas (optional; measurement dependant on how much you're making)

Directions:

To make Dressing: Purée basil, garlic and about ½ - 1 tbsp. olive oil in food processor (or blender). Transfer to a bowl, squeeze ½ a lime into the puree and stir with spoon.

To make Salad: Toss together tomatoes, cucumber, apple, mango, onion, and cheese in large bowl. Pour Dressing over mixture, and stir to combine. Season with salt and pepper, if desired.

Feel free to mix this salad with lettuce, spinach or arugula for yourself & your roommates and eat it for lunch or dinner. It’s also a great snack to bring to BBQ’s, parties, or to a friend’s house, because besides mixing it with greens, this gluten-free tomato salad makes for a great healthy dip that you can enjoy with pita chips =) Yum! We eat what's in front of us. So if all that's available at parties and BBQ's is greasy potato chips, wings, pizza and burgers then that's what you'll eat. Bring the alternative so you have a healty option to choose from - if it's there, you'll eat it and others will too!
