Feed Your Heart & Soul

Today I received a facebook message from an old friend through which she shared a great recipe with me specifically for this blog (which I’ve added below). What a wonderful feeling! In a world that’s always changing – when things are moving way too fast to keep up with them - there truly is no better feeling than to hear from someone you haven’t heard from in a while. As graduation gets closer, her fb message served some sort of hidden, deep, nostalgic meaning for me personally. Yes, eating healthy and exercising are both of obvious importance when trying to live and lead a healthy lifestyle. That being said, we can’t neglect our heart and soul.

Take a moment for yourself today. I know we all have more to do than there are enough hours in the day for. Especially with the semester coming to a close & finals approaching - it’s more than likely most of us won’t have time to sleep much during the next few weeks. Nevertheless, spare a few minutes to message an old high school friend just to say hi & see how they’re doing. You’ll be sure to make them smile and you’ll be surprised how great it will make you feel. After all, there are times when we need something a little stronger than caffeine to boost our spirits.

To make this lasagna “no-carb”, substitute noodles with thin slices of zucchini.
According to Elizabeth, the trickiest part is cutting the zucchini into thin slices. “I messed up quite a few times, so was happy that I had instinctively purchased two zucchinis,” she said.


Once you’ve sliced the zucchini, all you have to do is layer the other ingredients, so that it looks like this:

(Ingredients include: sundried tomatoes, ricotta cheese, roasted red pepper sauce & pesto sauce.)

For all of us veggie lovers, add some delicious fresh asparagus to finish off the dish. Simply drizzle olive oil & your favorite seasoning over them. Then, bake in oven at 350 for 25 minutes.
