Lunch Martini Anyone?

Mmm the tastes of summer =). Summertime is a great time to treat your body with clean, healthy & refreshing foods. If you’re that person who has been telling yourself to start eating better and exercising more, now is the time to get moving and actually implement some changes to your lifestyle. First off, summertime is the only time of year when there are no holidays coming up, so we can’t blame them for tempting us to fall off the wagon with rich holiday foods and binging. Instead, the heat of the summer tempts us to go outside for a nice walk or run, hit the tennis courts, jump in a pool. After a nice workout we’re hungry, but the thought of eating heavy, salty or fried foods makes us nauseous. Listen to your body. Give it the outdoor time it needs and then reward yourself for a nice workout by feeding your body with the light, flavorful, deliciously refreshing foods of the summer.

This Lunch Martini is wonderful for many reasons.
First of all, it’s filling. 1 serving of Crab Classics contains only 80 calories, 0g of fat, little cholesterol and is an excellent source of protein and omega-3. Mix that with some fruit & veggies and you’ve got yourself a great summer salad!

Ingredients: 1 bag of Crab Classics chunk style & 1 bag of Crab Classic flake style, scallions, ½ a yellow pepper, ½ an orange pepper, ½ a green pepper, cilantro or parsley (whichever you prefer), 1 ripe mango, 1 or 2 limes, distilled white vinegar, extra virgin olive oil, cracked black pepper.
Directions: Slice scallions into very small pieces & peppers and mango into small chunks. Combine Crab Classics, scallions, pepper chunks and mango in a large bowl. Wash cilantro/parsley & add to the mix. Drizzle a small amount of extra virgin olive oil, a splash or two of white vinegar, fresh squeezed lime juice and some fresh black pepper. Mix everything together for a delicious salad.

Top it off with a dollop of Home-made Guacamole:
Ingredients: 2 ripe avocados, 1 tomato diced into very small pieces, a few slices of purple onion minced, 1 (or 2) lime(s), chili powder & 1 jalapeño pepper chopped into very small pieces for a little extra punch (optional).
Directions: De-skin, slice and mash avocado in a small mixing bowl. Add tomato, onion, fresh squeezed lime juice (the more lime the better), chili powder and jalapeño pepper pieces to avocado. Mix all ingredients delicately.

Before serving this lunch martini, be sure to chill your martini glasses. Once chilled, put a dollop of guacamole on the bottom of the glass. Fill the rest of the glass with your seafood salad. Add another dollop of guacamole on top of the salad. Garnish with cilantro, scallions or parsley. Add a tortilla chip for decoration and serve.


This salad tastes delicious when served with a nice light & refreshing glass of Pinot Grigio =)
