A Vegan Option

The countdown to Super Bowl Sunday continues...5 days left =) Here's a Vegan Option [this one's for you Jason =)]

Classic Bruschetta:


Ingredients: extra virgin olive oil, 1 – 2 tbsp of fresh squeezed lemon juice, 1 – 2 cloves of minced garlic, 3 cups of seeded & chopped fresh tomatoes, ½ cup finely chopped (or minced) red onion, salt & pepper for flavoring, 1 French baguette. Optional herbs/spices: (depending on what you like) fresh basil, parsley & chives.
Directions:
1) Preheat oven to 375
2 )In a medium bowl stir together olive oil, chives, parsley, basil, lemon juice, and garlic. Add tomatoes and onion; toss to coat. Season to taste with salt and pepper. Refrigerate mixture.
3) Cut the bread into small bite-size slices
4) Brush each side of each slice of bread with olive oil
5) Put slices of bread on baking sheet and toast in oven 4 - 5 min. on each side (or until toasted)
6) Spoon bruschetta mixture onto slices of bread.

Voila! Appetizer Idea #2...a vegan option that everyone can enjoy!
